Butternut Squash Soup

Butternut Squash Soup

2 lbs. cut butternut squash
1/3 cup apple cider or orange juice
4 cups chicken broth (or water)
Kosher salt and pepper
Grated gingerroot (or take a couple slices and throw in)
A sprinkling of cinnamon

Serve plain or with creme fraiche, sauted apples, and/or toasted pepitas
